I’ve been combining avocados with chocolate for a while now and although it may seem like a bit of a strange combo, it’s really not and it’s a great way to add some healthy fats to your sweet treats.

According to one of my daughters these are the best things I have ever made. The other one hates avocados and doesn’t trust me anymore when I tell her my recipes don’t have them in. She tried them anyway and it wasn’t until she saw my Instagram feed that she learnt the truth!

Anyway, it’s been a few days since I made these now and I keep promising to post the recipe but a few unexpected thing cropped up this week and it just didn’t get done. But, better late than never, as they say, here it is.

  

Ingredients

1 avocado
half cup maple syrup
half cup apple compote
1 tsp vanilla extract
3 eggs
half cup coconut flour
half cup 100% cacao powder
1 tsp baking soda

Method
– Preheat oven to 180 degrees C
– Whizz together the avocado, maple syrup and vanilla in a blender
– Pour this mixture into a large bowl and whisk in the eggs
– Add the coconut flour, cacao powder and baking soda and mix well
– Grease a baking tin with coconut oil and add the mixture
(I used a round tin and made the rest as muffins)
– Bake for 25 minutes
– Allow to cool before cutting

They really are delicious and I have had plenty of tasters who will vouch for that. They are practically health food they have so much of the good stuff in them…just don’t go eating too many.

The surprising thing about them is how moist they stayed. Usually when I use coconut flour, it tends to really soak up the moisture of the other ingredients and whatever I’m making goes quite dry, but not this time which was a real bonus.
